‘As autumn arrives, ceps come into season – my favourite mushroom. Roasted in butter, they have a wonderful woody, nutty flavour and pair beautifully with meaty fish like bass, turbot, or monkfish. Making pasta at home is surprisingly fun, easier than it sounds and sure to impress your dinner guests. The dough can be made the day before, leaving the agnolotti on a semolina-dusted baking sheet until ready to cook from fresh.’ – Head Chef Tom Fraser
